using gauged bluestone

I've found some gauged blueStone (http://g603.net) that I really like the look of and (http://maplered.com) was wondering if it could be used for Counter (http://GialloFiorito.com) tops. I know that polished is usually used but I was hoping for a more natural looking finish. The Stone (http://g603.net) has a very smooth finish - it's not a typical rough gauged surface - however, I'm a bit worried that the surface will pick up stains easily and (http://maplered.com) that it will be hard to clean. If anyone has some helpful advice I would appreciate it.
